Treat Restaurant Marketing Like a 90-Day Hire, Not an ROI Guarantee

Evaluate restaurant marketing like a new hire: define the job, inspect execution early, and judge sales only after the outcome has time to mature.

A restaurant marketing guarantee sounds safer than a trial, but it can reward the wrong behavior: weak attribution, easy activity metrics, or optimistic assumptions about revenue. A better approach is to treat marketing like a new hire—define the job, check execution immediately, and give the real business result enough time to appear before deciding whether to continue.

Ninety days is a useful management frame, not a promise that every channel needs exactly 90 days.

Start by giving marketing one clear job

“Grow the restaurant” is not a job description. Choose the constraint you are hiring marketing to change:

The job determines the evidence and the timing. A broken landing page should be visible in days. A repeat-visit strategy cannot be judged before enough guests have had a fair chance to return.

Inspect the work early instead of waiting three months

An owner evaluating a paid trial said results should be visible within three to four months and wanted the freedom to leave instead of accepting a long commitment. The desire for a decision point is reasonable. Waiting until day 90 to discover that nothing launched correctly is not.

In the first weeks, confirm that the audience, offer, creative, destination, budget, restaurant instructions, and tracking all match the plan. Complete the guest path yourself. If a reservation form is broken or the staff cannot recognize the offer, fix it immediately.

Early checks answer whether the work is being executed. They do not automatically answer whether the restaurant has acquired profitable, returning guests.

Give each outcome the time it actually needs

Give each result enough time to mature before judging it.

Ad delivery and clicks appear quickly. Reservations need to reach their scheduled dates. Offer claims need a reasonable visit window. Settled checks need time to reconcile. Repeat visits need a longer and equal follow-up period.

Do not compare a mature group from last month with half-finished claims from this week. Keep future, open, and unresolved records separate until the relevant window has passed.

This is why a fixed short-term ROI promise can be misleading. It may be possible for a direct-response campaign with a short visit window, but inappropriate for retention or high-consideration events.

Revenue is not the same as a productive marketing hire

Marketing can be associated with sales and still lose money. Start with net settled sales, subtract the variable costs of serving those checks, then subtract media, creative, offer fulfillment, software, agency fees, and campaign-specific paid labor once each.

Directly matched sales are observed sales under the matching rule. They are not automatically incremental. A strong decision separates what was directly connected, what changed against a baseline, and what a credible comparison suggests the marketing caused.

The standard should be proportionate to the decision. You may not need a scientific experiment to make a small creative change. You should demand stronger evidence before scaling a large budget or claiming profit.

Day 90 should produce a decision, not a ceremonial report

At the end of the agreed trial, ask:

  1. Did the work launch and run as promised?
  2. Where did the intended guest stop moving?
  3. What visits, checks, or repeat behavior can we verify?
  4. Are the economics within the restaurant's limit?
  5. What specifically improves in the next period?

Continue when the result is healthy or the evidence shows a repairable constraint. Repair when one clear handoff is failing. Stop when execution and measurement are sound, the outcome has matured, and the economics still do not work.

A guarantee cannot replace these decisions. It can only define how money moves after the result. The restaurant still needs to know whether the marketing created a repeatable way to acquire or retain profitable guests.
